Garlic Elephant
Enjoy fresh flavorful produce from your own garden with California Garlic. A top favorite variety, it features a wonderful mild garlic flavor. Although it looks like a large garlic, it actually is related to leeks. It can be planted in fall for harvesting the following season in late spring or early summer. Planted in spring, it can be harvested about 90 days from planting. Elephant Garlic averages about 6 cloves per bulb. Dry the bulb out in a cool, dry space for a few months before storing. Drying Elephant Garlic will enhance flavor and will help extend its shelf life. Elephant Garlic can be stored for 10 months or so.
Plant in full sun in soil that has been amended with compost or other organic matter. Before planting, crack the heads of garlic open and separate the inner cloves, leaving their papery covering intact. Plant the cloves pointy end up. Put them six inches apart and three inches deep.
